Somewhere there is an FAQ on this subject. But where? Anyway the choice is up to you whether to cut down to a node or to cut the spike off at the base...It might grow a new side spike from the node.

I cut all of mine off at the base. The plant will make new spikes.

I left my spikes on & they re-bloomed 3 more times.

I'm with Jane, in my experience if you cut back the spike to generate another bloom or three, those blooms and any new spike's blooms don't perform as well as they could if you had cut back to 1/2 inch and 'killed' the old flower spike.

On the other hand, if you are not cutting the spike and they rebloom from the end, you may have a phal that blooms continuously (violacea, equestris, etc..). That's different than cutting a spike at the 3rd or 4th node to generate a side spike to produce a few flowers.
