Kitchen layout help

Hi everyone,

My husband and I are in the early planning stages of a kitchen remodel. We will likely end up going the IKEA route, possibly with custom doors and a custom piece for the bay window area. However we are struggling to determine the most effective layout for our space. In general we’re thinking the layout would stay relatively the same, just removing the upper cabinets above the peninsula and possibly turning that into an island with bar seating. Really the problem is the bay window/railing space. We do not use that as a breakfast nook and would prefer it to be utilized with some type of cabinets or storage. Any thoughts on how you might use that space to extend the kitchen? We are open to any suggestions for that area including some major remodel of the space. FYI the pictures and floor plan are from when we bought the house. We now use the space in the front of the fireplace as our dining space- the reason why we no longer use the breakfast nook. We also will be putting hardwood throughout the entire space with this remodel.

Thanks!
