I need help ASAP please!

I posted this elsewhere but think it was under the wrong heading so I'm trying here. I'm having an issue with granite install seams and chipped corner. The seams appear to be placed properly from other posts I have read but they are way too wide and noticable. The granite also chipped at the corner near the slide in range and the installer tried to fix it with expoxy that looks off color and rough to me. There are also scratches all over near the seams. The original job called for a super single sink but the installers brought a split sink with them so they had to come back the next day with a different sink than we ordered as it would not fit as the corners were now cut square not rounded. I hope I am being clear enough. This whole thing has been so distressing as the job was done as a gift for my 84 year old mom and she has been displaced for three months and now the granite is not right. The company owner has told me the industry standard seams are correct at 1/8 in. (I've posted pics with her measuring) She said they would polish and it is fine. I am not in the state and would have to fly in to inspect and pick new granite but they do not have another piece of this granite in stock so it would be hit or miss. I would like some opinions as this is my first experience in kitchen remodel. Thanks so much for any help you can provide.
