Are you willing to move the electric at all-? If not, it seems you may have to stay with a very slim profile ceiling mount fixture so that your mudroom doors won't open and hit the fixture. If you move the fixture junction(s) to, say, line up with the center of your mudroom door, you'd be able to accomodate a wider variety of fixtures.

I had the same issue as you and changed it out with a slim LED light, super easy, my husband did it, the light is nice in there now. Yes recessed lights would have been better but this update only cost $50 for a new light fixture, so it was a win.

Beautiful and not inexpensive. Two recessed cans like the 2" Juno or 3" Lightolier would be my choice.

Maybe some can lights might look better in such space. You could also try to place them a little separate from each other so you get more light

I think a wonderful semi flush mount or flush mount would look great in the space and give it that little something. But, I would pull it away a little bit from the cabinets, due to the doors possibly hitting it. If you can't move your wiring then keep it narrow. If you think you still can't find anything that would work in the space, then the can lights would be your way to go. Good luck!
