dining room with tray ceiling

Dining room advice please! We started a renovation. Found that our previous owners had a beautiful tray ceiling hidden under their 7’6 ceiling. How do we paint this? Or how would wainscoting or beautiful wood paneling paneling look? The first two photos are the dining room. Side walls are 8’4 high before it angles to a sloped ceiling. The back wall is highest to the ceiling at 11’6! Would we paint everything EXCEPT the flat ceiling where light fixture will hang? Also, my husband would love a higher wainscoting. I would rather all painted white wood panel up to 8’4 all the way around and paint the higher part of the 11’6 wall. This room connects right into the sitting room which has the lower 8’4 ceiling. This sitting room is the third photo. The ceilings in the sitting room are 8’4 so we’d like to paint both rooms the same and/continue wainscoting or paneling at the same height. One wall of the dining room has a large window.

This small window right above is IN the sitting room and is on the same wall as the big window in the dining room. It's just two rooms very open to each other, it's just the dining room that extends up to a higher tray ceiling.
