This plant was found by the road and I was wondering if the fruit could be eaten?

They're an antecedent of Opuntia, which is (1) the most widespread of cacti (from the Peace River of BC to Patagonia) and also, IIRC, the most diverse. Beyond that, I'd have to break out some books. They're a most fantastic genus, those Opuntias, with subtribes a'plenty.

Btw, what is the reason for classifying Pereskias as Cacti? Anybody to quench my curiosity?

I did some searching to find out that, as you suggest, the first Cacti were "shrubs or small trees with photosynthetic leaves." ! https://www.sciencemag.org/news/2006/05/some-it-hot Interesting!
