My neighbor with a similar look did a herringbone pattern with a light tile that was close to a light color in her countertop - I think she went with cream or white and no contrast in the grout. Like you she has an over the range microwave and I thought the herringbone would not look as good restricted to the space between counter and cabinets, but it looks very nice.

Just do the wall with the range - don't turn the corner by the door. If your flooring and counter are cool tones - go more white (possibly light gray if there is a light gray in the countertop). My neighbor's flooring and counter read warm, so cream was a possible choice.

Herringbone is just one idea. I would keep the tile a simple color - no mosaics. The countertop is very pretty and you don't want it to fight with a backsplash. You can look at different tile shapes if you want something different then a subway tile.

Easy to clean.

Are your cabinets black or dark brown?
