Hand made white subway tiles would look good, but I would not put something like your second picture with the hood in the first picture. It is too distracting for that special hood.

Keep it simple. You already have a star, so you don't need another one.

The actual tile in the white-hood photo is Dupont by Mosaique Surface...

but I might think twice about such a bold patterned tile with a bold, black & gold hood. I think part of the reason it works in the inspiration photo is b/c the hood is large but fades somewhat into the background due to the all white palette. Your hood is already a statement piece (wow!!!) .. it could end up looking a bit noisy having a statement tile too..

That hood is enough. Accent backsplashes behind a range can look dated and are not needed with such a dramatic hood.

A high-end look currently is a medallion or plaque hung there, in brass, copper, or cast iron.

Skip the accent backsplash. Just let the hood be the star.

No accent backsplash with that hood. The inspiration photo is a completely different hood design, monochromatic (essentially) with the surrounding cabinetry, and has no other backsplash tile to contend with. A black and gold hood, with other colored cabinets and walls, and other backsplash, with yet another multi-color accent tile would be dizzying!
