Given that you have a short backsplash already, and the placement of the light switch plates, I probably wouldn't do another backsplash at all. If you must, I'd use one that has bullnose pieces and end where the counter ends, since your uppers are inline on both sides, and just have the tile cut around the switch plates.

Can you remove the short splash?

No chance of getting an electrician to move the switch plates?

Unfortunately there is no way in getting those switches moved. I could remove the short backsplash. The question is would i cut around all switches or only the ones at the end?

Agree. If you can’t change the box locations, don’t do another backsplash.
