Unless you want to change the the shape of the fireplace which can be done and the stone completely covered up. You could simply get a contractor to frame it in. If you are OK with the stone but not the color - I would look at blending the color with the color of paint you use on the walls. The stone can be fauxed with a color wash and then sealed. If done right it would still look like stone.

I'd get rid of all of the stone and surround the fireplace to the style of furniture you're buying. Contemporary? Traditional? Modern? Mid Century?...etc.
