I have a stone paver patio. It has been professionally redone with high end paver lock sand to keep the weeds out of the joints. I absolutely hate it, it requires constant attention. I loathe roundup, and hesitate to use it. I’d much rather have a tree deck!

The main consideration in deck vs patio is floor height above grade. Here, you are not that far above, so a patio would make more sense. Figure out what activities will occur in the outdoor space, and for how many people, and the furniture used in order to get an idea of the amount of square footage needed. You will try to design it or hire it out?

Here’s a few pix showing much of our patio. It’s approximately 950 sq. ft., having dining, bistro, socializing, cooking, hot tub and fire pit areas. The Pergola is 8x12. Our egress deck was designed to make food transport easy and to enable older guests comfortable movement. Maybe some ideas.
