Candice, I had a couple of large seedlings produce very large outsized leaves last year.. I believe that they were responding to too large large and frequent fertilizer doses with humongous leaves.. I drastically reduced the fertilizer ( read not at all) for the Winter & Spring) resulting in normal size leaves.. No more freakily big leaves sapping all the plants' strength.. It's is odd that only some of my plants grew the huge leaves and the rest produced normal ones.. Sorry I can't offer an explanation why only some plants did this, but you are not alone in experiencing this..
