It can’t be two feet apart if it’s sharing the same alignment as the can lights plus you don’t know how wide is the lighting canopy. Two can lights two pendants depending the size.

What is the height of your soffit from floor to ceiling?

8' from floor to bottom of soffit. 9' ceilings total.

What is the size of the bar area?

Edit: Was overthinking this I think. I just threw it in excel and played around with it. I guess the better question is is the 19" spacing or 10.25" from the edge the best practice here?
