How Do I Slow Down Broccoli Bolting?

I have Di Cicco broccoli that I started from seed. At this point, all the florets are bolting. The plants are very lush, and the florets are very spindly but taste really good. I mulched heavily, so I didn't think too warm soil is the problem. Is there any way to prune the plant to slow the bolting? I have about a dozen. I cut back some of the plants to see if that might cause them to recover - but I'm not sure if it's worth the bother. (I can cook the rest of the plants, as I have seedlings for my fall crop.)
