The rest of the house seems updated, which is making that speckled granite stick out even more. IMO the countertop is the issue. The backsplash is pretty light already, and you already have undercabinet lighting. Going one or two shades lighter isn't going to make a big impact. A new, more updated lighter countertop would be my vote.

You could always also do a simple white subway tile... beveled... 2x8... etc.

I think your cabinets are beautiful, and like the rest of the house that are shown in the pictures too. I would also suggest something like the gray accent tile on the fireplace.

I would use simple glossy tile in one of the lightest colors you find in the counter material....no pattern.
