When I have had apricots (we don't have an apricot tree, but a friend has a huge, massively overgrown one), I just use the very same recipes for them that I use for peaches....you can preserve them like you can peaches in a boiling water bath if you have apricots that can be sliced (some cling to the pit too much and are pretty much crushed or pureed by the time you remove them from the pit) , and you also can boil down the puree to make jelly, jam or fruit butter. You will not necessarily find a lot of canning recipes specific to apricots. I just use the standard canning recipes for making jelly from peaches or plums and substitute the apricots. If you to the freezing section of the website of the National Center for Home Food Preservation, which is the source for the two above recipes, there's a great recipe there for freezing apricots. Later, after you thaw them out you can make a nice apricot cobbler with them, or apricot home-made ice cream. Again, just use the standard peach cobbler and peach ice cream recipes and sub in your apricots.
