Best way to continue this tree

My wife and I are looking for local people with good pear and peach trees to take cuttings from later on once our house is built, but just found out yesterday that a friend of ours has two real nice-producing pear trees in his yard that he's having cut out to put up a chain link fence for his dogs. Given that it's august, I know it's not the best time of year to do cuttings. What's my best option here? One is still small enough (although producing) that we might actually be able to transplant it, but the other is certainly too big.
