I love your cabinets. Where did you find those? I might remove the cabinet and put shelves on both sides of the sink.

I don't think any symmetry issue is as much the point compared to the height and issues of tall cabinetry. The window could and should be taller w these cabs...but likely not possible, so for now I'd keep the single cab over there because it looks useful and allows things to be placed in a couple locations instead of just near fridge and cooktop. And I'd get a curtain pole and mount it high above window and place a valance or something you like w color or pattern . This will keep that higher up visual working w the dark tall doors and the dwarfed window will gain stature w window treatment up high. I'd be reluctant to start taking down cabs or moving them around now. you can make this vusually pleasing w simpler actions.
