If you are feeling adventurous (and have the budget) maybe even go all the way up to the ceiling where the sink is! We just did that in a kitchen where I work and it looks beautiful!

Sorry I am a lover of color and texture. Your floors are beautiful so I think I woul go with shades of brown glass tile, some copper and bronze thrown in. Still neutral, but much more interesting.

Curious if you could share the name of your quartz counters? We are in the middle of a renovation with the new version of the Adel cabinets (same look and color), and want a light quartz counter. I'm having a hard time finding the right thing to match the creamy white cabinet. What did you end up with on your backsplash?
