No, that is deadheading or removing spent flowers....not the same as pruning. And that can be done any time you like but it just involves clipping off the flowers only. Dead wood is just that - woody stem growth that has no life or fails to bud out in spring.

Pruning in fall is never advised for woody plants - trees and shrubs. Pruning in fall can encourage new growth that will fail to harden off as well as expose older growth to winter cold damage. They are best pruned while dormant (winter) or before new growth starts in earnest in spring. Or in some cases with spring blooming trees and shrubs, immediately after the bloom cycle.

If you want larger, don’t prune your Limelight. That will sometimes tend to create fewer, larger bloom panicles and long, softer new growth that is more likely to bend when wet and thus give you less height. Just because you can prune them in spring doesn’t mean you necessarily want to do so. There is no requirement to prune hydrangeas except to remove dead or crossing branches.
