Another Lacanche Thread

I am in middle of a major home renovation and in process of making decisions regarding appliances. One thing I am sure is getting a Lacanche range. I visited the NYC showroom and looked at the ranges and finally decided to pull the trigger on a Chambertain - Classic 4 burner (2) 11K, (1) 15K and (1) 5K with induction option.

I was pretty sure of the configuration I wanted but I agonized on the color a lot. There are so many pretty colors :). Here are my questions to Lacanche owners:

What do you think of the configuration? Will I miss the 18K burner? Do you use it often?

Do you have the warming drawer and how do you use it apart from for keeping food warm?

What do you think and is there anything you dislike about your range?

Did you get your range earlier than specified time or late? (I am thinking about sea freight)

I am planning on putting a Combi steam oven in pantry as a second over. I was considering between Advantium and CSO.

Any advice/ help is very much appreciated. Thanks in advance.

Congratulations and I hope you enjoy your range as much as I enjoy mine.

I have the Chagny 1400 ( 5 years now), (no induction). We use the warming cabinet all the time, keep food warm, slow cook, and Sous Vide. The warming cabinet is so much better than the warming drawer I had before. Also have the Traditional plate. The range is very versatile. It has changed the way I cook. The gas burners are very powerful.

If I could change anything on my range it would be to change the oven racks to the telescoping oven racks. But this is minor. Other attributes far outweigh this small factor.

My range came in early, and I had Art Culinaire store it for a few weeks. I did order well in advance though. my color is French Blue. The range is fabulous and the company is absolutely the best to work with in my opinion. Good luck!

@ Gardener2014- French Blue is great color. It was one of my shorted list color. My reno just started so I have ways to go. I was told if I order now it should be delivered early April so that should be good timing.

This is the first big selection for the kitchen so I just wanted to hear from other owners just to be reassured. Thank you for sharing your experience. I don't know anyone who actually owns this and experience is mainly from the great reviews here and how pretty it is :). I enjoy cooking and want my kitchen to be an inviting space where I want to spend more time. I waited/ planed long enough to make the renovation happen so now just want everything to go well.

It all depends how you cook. We just had our Cluny 1400 installed a week or so ago. We still do not have countertops, so my cooking has been limited. But I did make soup yesterday and used the 18k burner to start, then moved the pot over to my induction hob to keep the soup at a simmer. I have seen the 18k burner used to cook in a tagine. I imagine it will be good for wok cooking as well.

Do you have the warming drawer and how do you use it apart from for keeping food warm?

I do have a warming cupboard. I haven't used it yet since our kitchen is not complete. But my understanding is that it can be used in place of a slow cooker. It can be used to cook rice (just bring water to a boil beforehand and then place the pot in the warming cupboard). And I have read about sous vide cooking on here (just pull up some of the old Lacanche threads and you'll learn a great deal about the warming cupboard).

What do you think and is there anything you dislike about your range?

So far, no. I love it! I haven't cooked much but it's been easy to use. I did have to purchase a new roasting pan and will be adding some roasting sheets and other cookware as the ovens are smaller. But with the Chambertain, your oven is larger so you should be fine with whatever you have.

Did you get your range earlier than specified time or late? (I am thinking about sea freight)

My range came right on time. Also, my range is a custom color. Elisa showed me the Chantilly paint chip when I visited in NYC and I loved it. My range is directly across from dark navy cabinets and if I did any other color the reflection of the navy would have made the range look very odd. Sometimes I wish I planned my cabinets around the range and gone with a bold color, but I do love the Chantilly (very slightly off white -- warmer than stark white, which looked very cold to me).

Also, I'm not sure if you discussed this with Elisa. If you choose the Classique top, you will get a cast iron plate which operates similarly to the Traditional plate. I liked the flexibility of having both. I'm not sure yet when I'll use the cast iron plate, but maybe for the holidays when cooking for a crowd and keeping different sauces and things warm. Which hob are you considering over the warming cupboard?

Thank you for all that responded. I finally placed my order and I am beyond excited. I have been told I will get it mid- late March.

How exciting! So what did you end up ordering?

@dragonfly1041, What wonderful news! I know it is so hard to make all the decisions when renovating. It is so exciting and yet so scary at the same time. You are in good hands with Art Culinaire. Please share the color you selected and please post pictures when completed.

I choose the Chambertine in Burgundy red in exactly the same configuration I had initially considered: Classic 4 burner (2) 11K, (1) 15K and (1) 5K with induction option.

I really liked so many colors- Vert Silice, French Blue, Provence Yellow (loved it !!!), deft blue.....but in the end for my kitchen it was down to two choices- Black or Burgundy? Burgundy ? or Black? It was killing me :)

My DH said if I get black I will miss opportunity to get a color (he knew I loved the Burgundy - but at almost a grand more I was torn). I was hoping he will say go with Black so I don't have to make a decision. Elisa nudge me gently saying for a year I was on the website configuring my range in Burgundy so maybe that is the color that I am truly inclined towards. After 2-3 weeks of dilly-dallying, I went with burgundy. Now the wait......
