Questions about rose seeds / hips

I've been gardening for several years but have never harvested my rose hips or started the seeds so I have some questions about that.
1. After the temps dip below 32 will the hips continue to ripen?
2. After the temps dip below 32 degrees will the seeds inside the hips still be viable or do they have to be removed before a freeze?
3. If I bring the rose hips inside and put them in a windowsill will they continue to ripen?
4. I read not to take the seeds out of the hips until the hips are ripe. And it said they're ripe when the hips are kind of squishy. I have hips that are a pretty orange color but they don't feel squishy. So I guess they're not ripe?
5. Are rose seeds good candidates for winter sowing?
