I wouldn't switch the refrigerator and pantry. It makes more sense to keep the refrigerator on the end so it isn't in the way of the sink when open, it is closer to the dining area, easier to access from other rooms, and it keeps your pantry closer to cooking zones. I might even move your pantry over to the end of the other shorter wall instead of your wine fridge.

Not a pro. I don’t like the look of upper cabinets whose tops are at different heights. I would bring them all to the ceiling.

I agree with you--switch the fridge and pantry, and if the sink is centered, you still have plenty of prep space on the island. However, I like the idea of having separate prep and clean-up zones, so I think bens bride's suggestion to put the clean-up sink under the window, with a prep sink on the island, is a winner.
