The first thing you need to do is check your building codes. Where I live, you’d have to vent it especially if it is against a wall of your home. There are a lot of factors like ceiling height, how big of a grill, professional grade, and how much and what you grill but yes, you will get grease and soot build up over time. You may want to do a non-vented hood.
