Amanda, that "large batch" recipe was created by Carol/Readinglady for my benefit. The "official" recipe is much smaller. She spent much time and trial and error doing it and I don't think anyone has converted her version to weight rather than volume. If they have, I'm unaware of it.

Since her volume measurements have worked well for me, I haven't bothered to convert it either, I'm a rather "laid back" kind of cook. Because it works out well for me, I keep doing it, as soon as I mess with it, it'll become sauce. Or taffy. (grin)

You're tougher than I am, I can't even imagine it with ghost pepper. My husband would love it, though.

I make little cheese "thumbprints" and put a dab in the middle, makes a great appetizer, or on a bagel with cream cheese. I've used it as a glaze on chicken but it's a bit much for me to eat without that "buffer" of something else!

Yeah, I'm a coward when it comes to heat. I'm glad yours turned out well, enjoy!
