That’s an early 90’s update. Not original. Feel free to rip everything apart. It will need it to get rid of that tile and the terrible shaped island. That’s going to be very messy.

Post a measured floor plan. I know a big rectangular island would be so much better.

Take a drawer or door to the flooring shop to see what appeals to you. The current floor is the attention-getter in the kitchen. You can either pick another attention-getter (blue?) or something quieter. I would keep the Corian countertop.

I refreshed my older cabinets with new countertops, apron front sink, backsplash and under cabinet lighting. I already had a pretty wood floor. I am very happy with my refreshed kitchen.
