blue star griddle

Hello all,

Sorry to ask another bluestar question but for what they cosy BS has very little picture/details and my local retailers have the very basic.

I am considering the bluestar 24inch range with 24" griddle top to accompany our range top. I looked at a BS range with the 12" griddle and the surface of the griddle looked rough. Picture a 24" scarifying/grinding disk surfacing metal. (like combing sand on an arc). I wish i had taken a picture.

Who has a griddle and could you see grooves in it when new? did it fill/smooth out when seasoned? I have cooked on and seen a lot of flat tops and not have any ridges.

Thanks in advance

We got a 48” BS RNB with 12” griddle about 2 weeks ago and there are lines you describe on the griddle, visible, but if you run your hand over it, it feels perfectly smooth. We seasoned it as the user manual said to and it’s very non-stick when we use it. So far to clean it, we’ve only wiped it with a dry cloth and avocado oil.

    Queen e,

do you find the griddle keeps a steady temperature? As in, can you set it for 275 and will it stay there?

    Thanks for the picture

I haven’t noticed any major fluctuation and the flame seems to stay on throughout rather than click on and off (it’s hard to tell, because you only see the reflection of the flame in the neighbouring burner cavity), but nothing we have cooked on it so far (omelettes, pancakes, teppanyaki, and green onion cakes) has required it be on for an extended period.

Perhaps a silly question, but when we received our griddle and other parts (six parts) for our 48-inch BS range top, we did not like the fact that the "hole" on griddle goes directly down past the flame to the "catch" tray. I am not keen on that. Why isn't there a catch built into the griddle? Or am I missing something???

Toni, do you mean you don't want to get that tube greasy and would rather contain the griddle run-off on the top of the range? I just collect the grease in the little rectangular curb at the front with a paper towel to soak it up, and I don't bother letting anything go down the tube to the catch tray. I have a RNB so my griddle is built in so cleaning a greasy tube will be tricky, so in the name of good tube hygiene, I've decided to avoid using it. Sounds like yours is a Platinum? Mine arrived with everything in place, definitely not 6 parts!

I do have Platinum so griddle came with 6 pieces and the one I thought I would use most is the smooth, flat one, and it has a hole at the end, where grease would run out of it, but no "tube" came with it, so it would virtually pass the fire and go into the catch tray, which does not make sense. Unfortunately BS booklets aren't really much help. Perhaps I am missing a piece???

I’m not sure of the purpose of the design on the Platinum griddle. They don’t address it in the manual. Some have complained in the past about the heat coming up through the hole. This picture from one of their marketing pages actually has the flame coming up.

    Opaone,

How did you test the recovery time?

Did you do temperature mapping of all the griddles you mentioned. It would be nice to see the data to support what you are saying. It would be interesting to see what happens to the variations over time.

Looking for the highest performance as far as even heating and recovery on a built in griddle, my money would be on Thermador. It is aluminum which has much better heat transfer properties. The element(electric) contributes too

“Note that all griddles/flattops have some variation in temp over time.”

An overlay has the least amount of fluctuation because you don’t have the heat turning on and off all of the time. It is on and when adjusted is constant. The Platinum would win that criteria.

The Platinum also has a lot more heat available, almost 3 x the built in.

Can you provide a link to a water bath griddle?
