Canning Frozen Tomatoes

last modified: 6 years ago

We have MANY POUNDS of frozen tomatoes in our freezer(s)! We had a nice harvest last summer--but then life got in the way & we just didn't get them canned.

I would like to can them whole or quartered. I would, of course, remove the skins. Can I just do a cold pack method? Do I need to completely thaw them before canning?

I've canned lots of tomatoes, and have used frozen tomatoes before to make Annie's salsa. But I've not canned the frozen ones whole or quartered. I'm sure the texture will be different, but I'll use them in cooking soups, sauces etc. Will they be a usable substitute for stewed tomatoes, or will the texture be totally mushy?

Any advice is appreciated--thanks!
