Nearly no one replaces a sink with a double bowl. Single bowl sinks dominate.

The key fact you omitted is what width of Whitehaven are you getting. IMHO, you can get away with a double bowl with the 36" wide Whitehaven, but not smaller. I would prefer a single bowl even with the 36" width, but if you must get a double bowl, the sink, whether Whitehaven or another model, needs to be at least 36" wide.

Right...it is the 36" width. I really like to hide my drying dishes and do not feel the small side is wide enough at only 10".

If the 36" wide double bowl still makes you feel the small side is not wide enough, you have two choices: (1) as you mentioned in your OP, get the single bowl Whitehaven, or (2) choose stainless steel sink instead (they come with apron fronts too) because the thickness of the stainless steel sides and divider is much smaller than enameled cast iron, and will provide more space in the smaller bowl as a consequence.

We had a very similar Kohler sink with the 70/30 divide, and I just used the smaller side to wash and the larger (deeper) side to dry instead. Only was an issue occasionally with super big stuff, but that usually didn't fit in the other side either. That being said, I would still go with the single basin, but I understand they're not everyone's cup of tea.

One of the advantages of the single bowl Whitehaven is the offset drain, concentrating the disposal and plumbing on the right side. This leaves the left side of the sink cabinet free to house a trash can, taller cleaning supplies, etc. Could you be satisfied with a dish drainer that sits in the left side of a single bowl sink, which you can elevate as needed (e.g. https://www.amazon.com/Expandable-Stainless-Drainer-Counter-Rustproof/dp/B07KW1L8P2)?

If your main intent for the second bowl is for a drying rack please consider this alternative.
