Epoxy over Corian is criminal.

Cheesy choice. Its criminally foolish to cover up Corian. It’s a great counter surface.

It's a plain white from the 90's... while the island is a rich quartz. Regardless I am leaning towards leaving it.

Why not have the CCorian resurfaced , repaired?

I lived with epoxy over laminate any it was awful. Scratches, then eventually peeling. And that was same color over same color!

I also wonder about epoxy....following.

I ground epoxy off Corian once. Lost my butt on that one.

They look even more plain when the cabinets are not white, so I might just change the island color (w/ quartz on top) and leave the corian part alone.

That countertop can serve you 60 more years and still work. It’s the Little Black Dress of the countertop world. The big issue in the sterility here is the white cabinets. You need some wood and some color. Do a wood island top, and paint that island your favorite color.
