Counter-space vs. Oven-space

I'm in a pickle with my plans for our 2020 kitchen reno. I'm an avid baker and we cook just about every night. Our current plans with a double oven would allow for:
1 - 30" open counter above the dishwasher;
1 - 30" open counter between the double oven and refrigerator;
2 - 20" flanking a 36" cooktop
In addition, outside of the "working triangle" there will be a 48" peninsula and 36" of open counter-space approximately 7' away from the 36" cooktop.
I'm not sure what's a better design decision...more oven space or more counter space. My mom made a comment that I won't have much counter-space near the cooktop and will ultimately lead to me prepping everything at the peninsula and having to walk it over to the cooktop. After her comment, which I reluctantly know is probably true. I thought of an alternative by considering the AGA 48" induction range with 6 cubic ft of oven space spread amongst 2 ovens and a broiler. This setup would leave me with:
2 - 12" counters flanking the range; 1 - 60" open counter-space across from the range; 1 - 30" open counter above dishwasher + peninsula and 36" counter mentioned above.
I'm sure most of the year, people only use 1 oven and only use the second for holidays. I'm stuck on the thought of how nice it will be to have 2, but I feel like counter-space is probably more valuable on the day-to-day.
Just need a bit of experienced guidance - thanks!
