You probably don't need to remove ALL the drywall in the kitchen, but making some strategic holes in it is probably all that is required. Drywall is comparatively easy to fix in the scheme of things (of course, electrician find it easy to make holes because they're not the one who has to fix it).

An experienced remodeling electrician is amazing at keeping drywall damage minimized when fishing wire.

The amount of Sheetrock that will need to be opened is dependent on which way the existing wire is run in the wall.
