Worldly and Amazing Gray are so close that I don't think that will do much breaking up. You'll get more variation from differences in light from one wall to the next than from the difference in the paint color.

We do have agreeable in our dining room which shows more a blue due to the light.

Ok so not much. I would go a little lighter, like SW 7042 Shoji White. Hey if you ever get tired of the white subway tiles now would be the time to pull them down, and bring your paint down to backsplash #1.

Well you do have some direct sunlight. Your cabinets are off white, the rest of the first floor is grey, do you want a little more color or do you want to stay neutral? Also, do you want to have one backsplash, or keep the two, counter material and tile? Most of whatever color you choose will be on the wall above your cabinets if you keep them both. You get to address the corner installation issue if you pull down the tile, and whatever color you choose, you get to actually bring it into the space.
