Backsplash Grout Removal

The guy who installed the backsplash in the kitchen must have fell asleep during tile setting 101 and put grout between the bottom course of tiles and the Corian countertop. I wasn't involved in that project but SWMBO wants to caulk the area behind the sink, which makes sense.

I have an oscillating tool and the the appropriate blades but I'm wondering what might be best way to protect the Corian countertop. I'm thinking a 8" taping knife but maybe there's a better idea...

Is one brand of color matched caulk any better than another? I have no idea what brand of grout it is but if I had to guess, Custom Building Products.

Thanks!
