Container persimmon/figs - new container/medium now or wait?

I'm in zone 6a and received a couple of fig trees and a persimmon that are already leafed out. They're a bit sad from the trip, but I think they'll perk up. They're in 3 gallon pots and are maybe 3.5 feet tall above the soil. The persimmon already has a blossom. Last year I ordered persimmons (different variety) and jujubes from the same company and immediately removed them from their nursery pots and put them into gritty mix. They did ok, but it was tough for them. To be fair, it was pretty late in the season.

Is it better to 1) plunk them into bigger pots with similar soil (looks like a basic potting mix) and wait until dormancy to clean off the roots and put into gritty mix 2) just do it now 3) something else

I am still a novice to growing much of anything though I'm proud that the trees I did containerize and overwintered are doing so well.
