Advice on backsplash tile please

Seeking advice on kitchen remodel. We removed our above range microwave & are putting in a range hood & new backsplash tile throughout the kitchen. We decided on 4x12 matte greige subway tiles. Our cabinets are antiqued white/alittle yellow hue (which we don't care for but are working around it). The counters are a mix of ivory/gray/greige/brown. Walls are Revere Pewter, but we're considering an accent wall color since the subway tiles will be so close to the wall color. The rest of our decor is rustic with gray & brown colors. The accent tiles we're looking at are the ones that come on the 12x12 mesh squares. The individual rectangles are very small. I attached pics of everything (although the subway tile shown is 3x6, but we're doing 4x12).

We'd like to do something with the accent tile above stove. We're wondering if we should 1) Do a decorative focal point rectangle above stove & under vent hood. It would be small, as there is only 30" between cabinets. Or 2) Use the accent tile to tile the whole area above stove Or 3) Not use accent tile at all & just use subway tile throughout. And additionally, should we tile just up to range hood, or all the way to ceiling? We have high 10 foot ceilings. We currently have crown molding, but are open to removing in kitchen if necessary. Thanks in advance!
