Question about trash placement.

I’m reworking my plan a bit. Mostly going from a 36” fridge to a 24”. This gives me space to put a dedicated trash cabinet next to the sink. In my previous plan I had a trash can cabinet in the island right across from the sink. In my old house I had a similar layout, L shape with an island and I never prepped anything by the sink, I always prep at the island. I think I just like to face out into the family room, not face a wall of cabinets. So is it a rule of sorts to place a trash can cabinet by the sink?

Also, is 12” wide enough for a Small trash can in small kitchen in a guest house?

Not sure if there's a rule, but having it by the sink is more common. I've seen it away from the sink like you described too. My personal preference is by the sink.

12" sounds like it's going to be good enough.

My trash can cabinet is in my island where I do the bulk of my prep. It is across from the main sink. (I also have a prep sink in the island.) Works well for me.

You might regret the smaller fridge. My trash is across from my sink in the island which I also prefer to prep facing outward

It’s a guest house kitchen, used by friends and family when they visit us in the mountains and also as an Airbnb. Max occupancy is 4 people, but it’s really a couples retreat. I have a 24 inch range and OTR microwave, an 18 inch dishwasher, so the smaller fridge seems to fit in better.

I think I’m going to plan on keeping it the island for now. The island cabinets are shallow depth so a trash can will fit in fine. Whereas next to the sink it’s a traditional 24 inch depth cabinet so I hate to waste that much space that could be for deeper items.

Trash pullout in the Prep Zone. Ideally, a functional Prep Zone has water as well.

Love this from the "Ice.Water.Stone.Fire" thread:

"WATER. You start a cooked meal by taking food out of Ice and bringing it to Water. Water is the sink you use to prep. There, you wash the food. Maybe you mix it with water. At minimum, you rinse your hands and utensils. At least, if you want to stay alive, you do. There was a woman here a couple of years ago who insisted she never used water to prep. She doesn't post anymore, because dysentery."

This is not a ‘cooks kitchen’ then so in concept you can do what you describe and it won’t be the end of the world. Just make sure your floor selection is water proof as drips from sink back and forth to prep zone (in a guest house where people aren’t diligently wiping up) will be an issue.

My trash pullout is in my island. My island has a prep sink and all prep takes place there. The trash is down at the end of the island so it is accessible to the cleanup sink as well.
