Moldy fruit will get eaten quicker, it's ready for the worms to eat. Bread - okay in moderation. Citrus - worms don't like and will avoid when fresh, but as the citrusy bits are degraded by other organisms, worm will eventually eat. Example - know how an orange peel will get blue green on the outside? That's fungi breaking down the parts worms don't like.

Basically the answer to most of the "they say don't add such and such" questions is do it in moderation, experiment bit by bit, and softer, smaller, partly rotted stuff is easier for the worms. And some of the reasons not to add stuff is that vermicomposters don't like the smells that result. The worms don't care much if they have room to avoid and can wait for stuff to get ripe.

And overriding caution - do not overfeed. If in doubt, wait and add more bedding.

An additional thought - consider starting a second bin when your worm population is dense. Some extra bedding and time fixes a lot of problems. Add food to one until it seems like enough, switch to adding food to the other one,letting the worms in the other bin do their thing until it looks like most food gone. Repeat.

If your household produces a lot of scraps for the worms, add more bins.

And when you run out of space for worm bins, start a regular compost bin or trench composting (bury the excess).
