Sand and refinish in regular polyurethane (oil based or oil modified will bring some yellow into the equation = makes it easier to coordinate all the woods).

I would would embrace all the different woods and simply do the easiest/cheapest option = regular sand/refinish with an oil modified waterborne polyurethane. I don't normally suggest oil modified but the ambering of the finish will HELP unify the wood tones to a single 'soft yellow'. It will be easy to live with AND work with the cabinet colours (which have ambered over time as well.

The average cost of a sand/refinish = $5/sf. There is no other flooring option that is that cost effective. Compare that to the cost of adding tile: $12-$15/sf WITHOUT extra costs. Extra costs = removing hardwood ($1-$2/sf) and then adding new subfloor ($1-$2/sf). If you go this route, be aware the tile will sit MUCH HIGHER than the wood. You can go with thin vinyl...but only if you want to. Even vinyl (sheet or 'tile look') will cost MORE than $5/sf.

The different wood floors are part of the character of this home. You are welcome to leave it in place and just refinish it.
