I think you need to figure out what makes sense for you when in use . BTW I see no advantage to a side swing oven door in commercial kitchens the doors get hot are hard to have people move past without getting burned . I also do not like fridges right next to ovens . Maybe post some pics of your layout and also are you doing all integrated appliances I have never found those worth the extra cost but I would need to see your plan.
