Staining a Victorian

I have a question about house painting. This is my first time having my house painted -- it's a Victorian (1888).

The workers scraped and sanded and applied two layers of primer before applying a stain. But even with that though the house boards often look rough now that the stain is on.

I was expecting the boards to look smooth. Is that unrealistic? Should they have prepped more? Should we have gone with paint instead of stain? (Our painters recommended we use stain.) Or is this just the nature of painting an old home that's been painted so many times before?

It's expensive to do this, and I would like it to last many years! It looks beautiful from a distance, I only notice the roughness when I'm close to the house.

Thanks for your advice!
