Uneven kitchen counter overhang

Greetings community:

My family just had some beautiful quartz-composite kitchen countertops installed, but there's an issue with the overhang. The overhang should be a standard 1 1/2", and it is until you get to the first seam, and the problem shows up. The next piece of countertop is 1/8" deeper. The counter is level; the seam is fine; but it appears the overhang was not measured and cut properly by just this small amount.

Looking at it farther away, it's not super noticeable, but it's clearly there.

Is this worth pulling up for a redo? (I'm weighing potential damage to the new cabinets and subdeck, the seam, and the large custom-cut piece that has the proper overhang measure.)

Could this be planed instead of removing and replacing the whole piece?

Side note: This is an insurance project for a new kitchen replacing a flood-damaged original. I'm seeking feedback from the project manager, of course.

Thank you for any feedback you can offer as well.
