What countertops and size of cabinets & sink for my master bath?

I have large wall tiles(23x47 )and smaller floor tiles (12 x 24) in Valleunga statuario porcelain tiles, with mosaic marble in shower pan. I am also doing a feature wall with a geometric mosaic tile vanity backsplash. I have light gray cabinets. Would love a little input from the pros :).

1. what color/style of countertop ( I do not want to do marble). Thinking a white with a slight pattern (quartz). or perhaps a rugged/lighter whitish gray concrete (quartz) look.

2. The upper cabinets that my builder purchased look to small to me to stand alone on each side of my almost 11 foot vanity Should I double them up - cheaper and in stock (pictured below) or order single door (no drawers) uppers in a larger size, but more $ out of pocket and I can not return others.

3. What size sinks would you put in vanity? I'm thinking at least 21 inch. Is 18 inches too small? Cabs are 30 inches. I'm doing under mount since I already bought my faucets.

My faucets/hardware are a polished nickel to add warmth. I also have a stone resin large white stand alone tub. The shower walls will be all glass.

Thank you in advance for your time, interest and input! Been doing this all on my own and it helps to bounce it off of the pros:)

cabs solo ( will add filler, crown molding etc
