Wow, pretty cool sink! I would love that, except a stainless steel apron scares me....with scratching and dents. Can you do a large single sink w/ a prep sink for disposer? Or do two large single sinks side by side? or back to back? Without a layout, it's hard to say if any of these will work for you. But still fun to throw ideas around.

11’ is longer than stone slabs, and ensures a seam. It won’t fit in an elevator either. Splitting this up into prep and cleanup sinks in different zones will create better functionality.

9’ is generally as long as standard stone slabs come. Those don’t fit in an elevator either. You have to account for every step of the logistics of travel.

Stainless scratches, but the scratches are easily removed, especially on an apron. Done it a zillion times.

In our area, we are able to get 11 ft stone slabs in a limited number of species. Check with your supplier. If your condo is a 1st floor unit, they can bring the island top through the front door. If it's an upper floor, they might need a long-reach forklift, but it can be done. Just get out the checkbook.
