Clear coat on the white oak will bring out the tannins (yellow undertones) in the wood. Even though it isn't "stained" exactly, the color with polyurethane or other clear protective coatings will look different than raw wood. Just wanted to pass that along, raw white oak is drop dead gorgeous in my opinion, but it doesn't look the same once it's been sprayed.

I’m doing a mix of white and rift sawn white oak. But I’m experimenting with the white oak so it doesn’t look yellow. Adding a little white to the water based poly.

We decided on grain matched white oak with a water based clear finish. At one point during the design process we had a mix of white and white oak but ultimately decided on all white oak. I hope we are happy with it. I do love a white kitchen ( our last house had a white kitchen). Good luck with your project!
