Height for Overwintering Banana Trees

Hey guys. So I live in a zone 5a climate and I'm preparing to try and overwinter my cold-hardy bananas in the ground. I've been told to build some type of a structure and fill it with straw? Is that the recommended method?


My main question is, if I leave the stems taller (and protected), will they grow even taller the next year? or will cutting them a few inches from the ground provide the same height?


Any tips are appreciated as far as overwintering bananas.
