The zest/rind is also used in cooking..... haven't done so myself tho'. I imagine you could juice the fruit once it turns yellow; I understand that it's very strong however. I've never seen the fruit, but I wonder if it would be candied. ??? (I candy some of my kumquats.)

Interesting idea - I will give it a try.

It is a very strong flavor. So far, I have found it is nice with pad thai, and curry, but that a little goes along way. I was thinking about trying it with a white fish or mixing the juice and zest into a rice dish.
