Planting bare root in winter

Do bare root stock need some transition time from fall planting into the cold weather? I wonder if it really matters as long as the ground is not frozen, and workable. One of the nurseries I get supplies from just dug out their spring trees and perhaps I could get some for December planting if it stays warmish. As long as the trees are dormant does it matter?
