First no fans in kitchens or DRs IMO as for the rest I would need to see the plan for the layout of the kitchen . Lighting is decided for function first. You have a vaulted ceiling where IMO pot lights become pretty useles for kitchen lighting so maybe check out cable lighting to get light where you need it. The chandeliers need to have context to understand what they are lighting. Wahy is your style ? So much more info needed . Where is your KD in all of this that is who really knows the space and your plan and should be designing the lighting also.

OK so have you had an electrician come out to "inspect" the project? I mean if you're going for a remodel, now is the time to add your recessed lighting and move junction boxes around. A chandelier in your kitchen is not going to give you proper task lighting and recessed lighting is not as expensive as you think.
