I don't grow "lucky bamboo" (Dracaena sanderiana) in water but I found this article that may help. It sounds like you should only have an inch of water or so.

I did cut my extra tall plant (Lemon Lime) in half and then cut that stem into 3 sections and put those in water to root. I hope to see some roots soon.

Thank you, I’ll definitely read that! The bamboo roots are only covered by a few inches of water because the pot was a little big so the bamboo roots are pretty close to the top of the pot not the bottom. I don’t know if that changes anything but it might?

Be aware that this plant isn’t actually a bamboo at all. ‘Lucky Bamboo’ is just the common name. If you want to research it on line, use the botanical name hc mcdole gave above.
